Dear everyone out there who was offended by my vegetable-based corned beef hash in March: let me make it up to you. This corned beef seitan should please even the biggest weirdo corned beef purist. What you do with this knowledge is up to you, but I strongly suggest making a reuben.

tahini caramelized onion sauce

I recently moved out of the apartment I’d lived in for the past two years, a situation which calls for easy recipes that don’t require a lot of cookware or ingredients. This tahini caramelized onion sauce was perfect for the occasion. It is comforting and seriously one of my favorite on-the-fly recipes ever, and one to which I return time and time again. (more…)

creamy curried coconut lentils

I don’t know how the weather is where you live, but here in Watkins Glen, spring is being a real tease. I thought this year’s days of warm, comforting meals were over, but of course, Nature felt differently. It snowed this weekend, and not in the mood to fight it, I got in perfect cold-weather form and whipped up a pot of creamy curried coconut lentils. (more…)

curried acorn squash

During the winter there’s a tendency (for those of us in the Northeast, at least) to get tired of eating squash. Fortunately, this curried acorn squash is a variant I never tire of eating. And it’s simple, too! (more…)

corn chowder with chipotle avocado aioli

It was cold in Philly for about fifteen seconds, but that kind of weather always puts me in the mood for a hot hearty meal. In my freezer, I had a ton of corn that I froze in the Fall, and so I settled in to make corn chowder with chipotle avocado aioli. (more…)

Falafel with Tahini Sauce

dried chickpeas

Falafel is one accidentally vegan treat you can get almost anywhere. There’s a falafel place right near where I grew up that stays open until 3AM. Naturally, this place saved my life many a time in my youth, so I frequently find myself craving it. Luckily, it’s so easy to throw together at home! Falafel was the first food I cooked from scratch after I stopped eating animals nearly 10 years ago. I promise my cooking skills have improved since then, Mom. (more…)

Plantain and Pinto Stew

Wednesday, October 28th, 2009

Okay, so this Vegan MoFo update is kind of a cheat. But I haven’t posted an entrĂ©e in a really long time, and I want to assure y’all that I do, in fact, eat things other than snacks and bread and sweets. I cook dinner just about every night, it’s just that I don’t usually measure anything. I make this stew every time I can get my grubby little hands on plantains. It’s warm and spicy and well-rounded and perfect for Fall. (more…)
