When I was little, there was a bagel shop nearby that my mother would take me to on special occasions. She would order a bowl of soup and a bagel, and I would get a cinnamon raisin bagel with Health Nut Cream Cheese. In retrospect, the moniker is a bit puzzling, as it was not exactly, uh, “healthy” per se. Falafel is one accidentally vegan treat you can get almost anywhere. There’s a falafel place right near where I grew up that stays open until 3AM. Naturally, this place saved my life many a time in my youth, so I frequently find myself craving it. Luckily, it’s so easy to throw together at home! These recipes probably aren’t new to you, but they’re all accidentally vegan.

Amid all of the veganized recipes I post, I figure I might as well let on to some of the things I, as a vegan, whip up on a regular basis. Besides pasta in all of its glorious forms, pizza, eggplant marinara, spring rolls, curry, sushi, and anything covered in garlic-tahini or peanut sauce, I am known to frequently whip up batches of baba ghanoush and hummus. This week, I also happened to have about 64893 lbs of parsley lying around, so I decided to make tabbouleh. These are three of my favorite recipes; each is good for a snack or quick meal, stores well in the fridge for a couple of days, or can be served as meze to groups of people.
