Fudgy Brownies
I was going to add okara to my last recipe as the binder, which I’m sure would have worked great, but forgot and made these brownies instead.
Be still, my heart. They are INCREDIBLE. Seriously probably the best-tasting vegan brownie recipe I’ve encountered yet. Many thanks to Bryanna Clark Grogan for being such a dang genius. I know not everyone has the same idea about what a perfect brownie should be like, but this is pretty close for me.
They’re not chewy or cakey, but incredibly decadent, moist, and fudgy, with crackled tops; perfect for eating warm with a scoop of vegan vanilla ice cream. I added pecans because they belong in something this gooey and sweet. Make these and I promise you’ll think you’ve died and gone to heaven.
I’m sure you could get away with using blended tofu if you don’t have okara on hand. And if your okara is particularly wet, just cut the extra 1/4 cup of water. Mine are slightly underbaked. Sue me.

WOW! The way these look and the way you described them (FUDGY!) sounds like they are my idea of a perfect brownie! Really yummy.

bryanna is indeed a genius. the trouble is, she is so good and so prolific, that it is impossible to keep her recipes filed. i wish i knew where half her stuff was in my bookcase or on my computer.
