Chocolate Mint Kiss Cookies

Peanut butter kisses are a classic cookie that has oddly never quite satisfied me (I never liked Hershey’s chocolate all that much). Here’s my chocolate mint version, which I prefer. Just like the classic, crunchy outsides offset smooth, creamy chocolate centers. These warm but wintry treats would make a perfect addition to your holiday cookie roundup.

When I came across these chocolate mint kisses, I fell in love. They’re delicious! The mint is extremely strong, making this a nice evening treat that you can’t eat too many of, like after-dinner mints. And if you don’t happen to have store-bought morsels, don’t fret! You can easily make these into thumbprint cookies, melt some semi-sweet chocolate with peppermint extract mixed in, and spoon a dollop into the center of each cookie after baking.

Another plus to this recipe is that it doesn’t require any ingredients you couldn’t find at a relative’s house. If you don’t have flax seeds, any egg replacer should work just as well (try using a quarter cup applesauce instead). Use your best semisweet or bittersweet chocolate in the cookies for the best flavor.

Chocolate Mint Kiss Cookies

yields 32 2″ cookies

½ c oil
2/3 c sugar
4 oz semisweet or bitter chocolate, melted
2 tbsp ground flax seeds whisked into 3 tbsp warm water
2 tsp vanilla
1¾ c flour
1½ tsp baking powder
¼ tsp salt
sugar for dusting
32 giant chocolate mint morsels, or ~1 cup of melted chocolate with mint extract

Preheat oven to 350°. Lightly grease two cookie sheets.

In a medium mixing bowl, beat together oil and sugar. Add melted chocolate, vanilla, and flax mixture and mix well.

Sift together flour, baking powder, and salt, and add to wet ingredients; mix until smooth.

Roll your dough into 1″ spheres, and roll them around in some granulated sugar to coat. Bake 2″ apart for 5-8 minutes.

Upon removing from oven, firmly press a chocolate mint morsel into the center of each cookie. Cool fully and store in an air-tight container.

  1. Such beautiful pictures and what a creative idea! I only like mint when it is STRONG, so these would be great since you say this mint packs a punch. These are really incredible looking, I would love to bring them to a holiday party.

    whoa. yum. dazee hates chocolate and mint, so these would be the perfect cookie for me to make! ha. actually, i’m wondering how they would be with half an earthball in em instead, and you don’t return them to the oven once you’ve stabbed them with the chocolater? your chocolate looks melty, but maybe that is just the way it is formed? anway, these look freaking delish.

      I bet an earth ball would do the trick, and if you still wanted mint, you could just add some extract to the cookie instead. And yeah, the chocolate pieces are formed that way, and when you stick them into the hot cookies, they get soft and melty around the edges. Yum.

    OMG!! They look soooo good. I’m definitely making these next week for a dessert party I’m attending. Two questions, I’m sorry if they may be silly but I’m not a very experienced baker.

    1. Did you flatten the dough balls after placing them on the baking sheet or leave them round and they flatten out while baking?

    2. If I have to use the melted chocolate w/mint extract could I just use semi-sweetened chocolate chips for that?

      Hi Mani!

      1. Nope, no flattening necessary. But if you’re doing the melted chocolate method, make sure you press down the centers right after baking, so there’s a place to pour the chocolate.

      2. Yep, semi-sweetened chocolate chips would be fine.

    Is there anything I can use to replace the flax seeds? Would 1/4c silken tofu with a tsp of cornstarch do the trick?

      The flax seeds here are acting as a binder, and add moisture to the batter. I haven’t tried using silken tofu in this recipe, but I imagine blending that up or using an equivalent amount of unsweetened applesauce may work. (I would probably skip the cornstarch.) If you try it, let me know how it turns out!

    Sooooo good! I didn’t have flax seeds so I used 1/4 silken tofu with a teaspoon of corn starch so they weren’t too fluffy. They turned out perfect! I also didn’t have the mint pieces so I just pressed down and put a few chocolate chips in the center. I’m going to be sure I use the UFO’s next time I make these, which will be very soon.
