Chocolate Orange Mousse Pie
This chocolate orange mousse pie tastes a lot like those Terry’s chocolate oranges that used to be all the rage back in the ’90s, or something like that. Anyway, don’t resist: pairing chocolate and orange is a good idea.
Smooth and creamy, this is one of my new favorite pies. The combination of the chilled filling and the bright citrus flavor is a welcome change of pace from heavy winter meals. It’s quick to throw together (I made it up at the last minute before Thanksgiving), and it slices nicely, too! There’s really nothing to it.
Chocolate Orange Mousse Pie
Filling
1 12 oz bag vegan chocolate chips
1 16 oz container silken tofu
½ c powdered sugar
¼ c orange juice
1 tsp vanilla extract
zest from ½ an orange
Crust
2 c vegan chocolate wafers, cookies, or graham crackers, crushed
1/3 c sugar
½ c soy margarine
In food processor, combine tofu, powdered sugar, orange juice, vanilla, and zest until smooth. Melt chocolate chips in a double-boiler (or on low in a covered dish in the microwave); pour into food processor with remaining ingredients and blend. Set aside.
For crust, stir together crushed cookies and sugar. Melt margarine, add to mixture, and stir until evenly distributed. With your hands, firmly press mixture evenly into a pie plate. You can make neat edges by forming a “7″ with your hands and simultaneously pressing up the sides of the tin and down at the lip.
Pour filling into crust and refrigerate overnight. Serve chilled. Garnish with orange peel or chocolate curls and vegan whipped cream if desired. Try really hard not to eat the whole pie in one sitting!
