I have an always-growing collection of glass jars of all shapes and sizes just for occasions like this. Glass takes a lot of energy to recycle (and even more to produce in the first place!), so if you can reuse it, do! Having just the right container for the food you’ve made can put the final touch on your creation.

This thick, spicy BBQ sauce has been a hit with everyone who’s tried it. Throw it in a sandwich with a lentil burger, slather it on roasted seitan cutlets, drizzle it over crumbled tempeh on a pizza, or whip up some barbecue tofu. This isn’t going to set your tastebuds on fire or anything, but if you don’t love spicy foods, you can probably reduce the pepper amounts a bit . . . or maybe you should just skip this post.

For the record, this has been adapted from one I found somewhere on the Internet long ago.

BBQ spices

Homemade Barbecue Sauce

Yields 2 12 oz bottles

28 oz crushed tomatoes
½ c balsamic vinegar
1/3 c cider vinegar
1 c light brown sugar
½ c lemon juice
3 large cloves garlic
1 tsp black pepper
2 tsp salt
1 tbsp cayenne pepper
1 tbsp red pepper flakes
1 tbsp paprika
2 tsp Tabasco
½ tsp ground cumin

Combine everything in a medium saucepan, stirring frequently to keep it from coming to a boil or burning, until the sauce is the thickness you want. Once it’s started bubbling, it should take somewhere around 15 minutes to get thick enough to coat a spoon. Pour into warm, sterilized jars; let cool at room temperature and refrigerate indefinitely.
