Chocolate Coconut Cups

While you’re at it, why not make a coconut variation of chocolate candy? These chocolate coconut cups are seriously heavenly. I’d compare them to a Mounds bar, but they’re so much more gratifying than that.

As all of those companies (and bloggers!) out there making coconut milk-based ice creams have found, chocolate and coconut are delightfully complementary. I like how these candies highlight the best of both flavors, allowing you to appreciate each separately and together. Like peanut butter cups, these are so simple. This time I made smaller, thicker pieces of candy to accentuate the chewy crunchiness of the coconut, but feel free to fudge around with proportions and make them whatever size and shape you like. If you have an empty candy box lying around, try fitting them inside for special presentation.

Chocolate Coconut Cups

yields 16 1″ pieces of candy

8 oz vegan chocolate
½ c powdered sugar
2 tbsp raw agave nectar
1 c unsweetened coconut flakes (the finer the shred the better)
1 tsp vanilla
½ tsp coconut oil (or coconut milk)
16 1″ mini cupcake wrappers

Place cupcake wrappers in a cupcake pan. In a double boiler or microwave, melt chocolate. Place a small dollop of chocolate inside a cupcake wrapper. Using the back of a small spoon, carefully spread the chocolate so that it evenly coats the bottom and sides of the wrapper, making sure not to leave any gaps or thin spots. Repeat until all cups have been lined with chocolate. Refrigerate until chocolate sets.

Meanwhile, mix together the remaining ingredients. Once the chocolate has set, drop a spoonful of coconut mixture into each chocolate cup. If needed, remelt chocolate briefly. Drop a spoonful of chocolate onto the top of each cup, being sure to spread it to reach the edges of the wrappers. Refrigerate to set.

Serve at room temperature, so the chocolate will be a little melty in your mouth.

    I made some of these for Christmas last night but my kids and I ate a bunch already. I will definitely be making more, because they were so delicious and so easy!
