Perfect Peanut Butter Cookies

Along with chocolate chip, oatmeal-raisin, and molasses cookies, peanut butter cookies have always been a staple in my cookie repertoire.

I know there are different schools of thought when it comes to peanut butter cookies. My grandmother puts chopped peanuts in them, a tradition that never fails to trigger my gag-reflex, much like carrot chunks in orange jello. Then there are the dense, buttery, shortbread-like ones that are and thick and crumbly.

These are the kind I like the most — the soft-baked, chewy variety. It’s yet another family recipe that bears an eerie resemblance to that on the side of a certain shortening container. If you like them crunchy, just bake them a minute or two longer. If you’re looking for something really obscene, you can slap a thin layer of peanut butter buttercream in between two cookies. Or even better: make an ice cream sandwich with peanut butter ice cream. Just sayin’.

Peanut Butter Cookies

¾ c creamy peanut butter (the standard sweetened kind)
½ c shortening
1¼ c light brown sugar
3 tbsp soy milk
1 tbsp vanilla
2 tbsp ground flax seeds mixed into 3 tbsp warm water
1¾ c flour
¾ tsp salt
¾ tsp baking soda

Preheat oven to 375°. In a large bowl, combine peanut butter, shortening, and brown sugar. Add soy milk, vanilla, and flax mixture and beat well. In a small bowl, sift together flour, salt, and soda. Add dry mixture to wet; mix well. Drop by heaping tablespoons, 2″ apart on an ungreased cookie sheet. Flatten lengthwise and crosswise with fork tines. Bake 5-7 minutes. Store in an air-tight container.

    this made had me run into the kitchen and try out a batch of XgfX ones. my only changes were a sprinkling of chocolate chips and a little bit of maple syrup, cuz the xgfx flour mix i made up made them a little dry. we shall see.
