Vegan Corned Beef Hash

I haven’t shared a ton of breakfast recipes. I don’t usually eat breakfast as I’m rarely hungry when I wake up, but that doesn’t mean you shouldn’t! Vegan corned beef hash is a perfect dish to whip together when you wake up at 2PM after a long night.

Don’t go into this expecting something gourmet; it’s an attempt to mimic something that comes in a can. It might not look like much, but this makes for a hearty, comforting, diner-style meal. Just what you want when you’re hungover, right?

This doesn’t taste exactly like the corpse-filled stuff you’d find on a shelf at the store, but it’s a damn good recipe. So simple and easy to throw together, and it’s cheap, too!

Vegan Corned “Beef” Hash

serves 1-2
adapted from this recipe*

2 tbsp olive oil
½ c onion, diced
½ c cooked kidney beans, mashed
½ c potato, diced
3 tbsp water
2 tbsp tahini
1 tbsp soy sauce

In a small saucepan, heat olive oil on medium-high. Add onion and cook until browned. Add kidney beans, potato, water, tahini, and soy sauce. Cover and cook on medium heat ~15 minutes, until potatoes have cooked through. Keep a close eye on it, stirring occasionally, to keep everything from sticking to the bottom of the pan (you can add a bit of water to loosen things if needed). Remove lid, raise heat, and cook a few more minutes until browned and crispy. Eat alone or alongside some scrambled tofu and toast.

    This was very good. Thanks for posting it. A word of advice to people cooking it. I thought that it looked completely unappetizing until it was done. The last step where you uncover it and cook it down until it’s brown and crispy is what takes it from something you don’t want to eat to something you do want to eat.
