Jerk Seitan and Coconut Rice

Last week, I received a 50 lb bag of wheat gluten. That’s right: FIFTY POUNDS.
At under $2 a pound dry, it was seriously a steal, and will be keeping me company on culinary adventures for many moons to come. Bratwurst? Deli slices? Loose-meat sandwiches? Dumplings? Philly-style hoagies? Hawaiian pizza? Kebabs? Fakin’ bacon? Treats for the seitan-loving cat I live with? Nothing can stop me now.

Jerk seitan, made with homemade seitan and marinated in Jamaican jerk seasoning (thyme, allspice, cloves, cinnamon, nutmeg, and hot pepper), sautéed with bell pepper and onion and served with coconut jasmine rice with accents of cinnamon and lime, made with “homemade” coconut milk and hand-shredded toasted coconut on top. The additional lime wedge is mandatory — it really kicks everything up a notch. Serve with some ice-cold ginger beer and you have the perfect meal for an April heat wave.

you are the BEST. and fifty pounds?! that’s awesome! i always buy from whole foods’ bulk bins, and i run out way too often.
This looks very, very nice! Do you buy the Jamaican jerk seasoning or make it up yourself? I haven’t seen it here (Scotland), so would have to make my own, I think… Roughly equal quantities of each spice?

Well, I was out at the supermarket this evening and what was calling me from the spices shelves? A jar of Jamaican Jerk seasoning!!! It is now tucked up in my kitchen and I’ll be making this soon!

Penny – Awesome! There are a billion recipes online, and there’s also a recipe in Veganomicon (that’s less spicy); I do a combination of the two. If you got a dry spice mix, you can rub it directly into seitan or tofu and let it stand, or you can mix it in with some onion and lime juice in the blender if you’d rather marinate it in liquid. Hope you like it!
Oh wow, do you have any cat treat recipes?
A cat I’m fostering has Irritable Bowel Disease, and catfood with meat gives him violent diarrhea. I’ve tried like twenty different kinds, but vegetarian catfood is the only kind that doesn’t make him run like a faucet (I use the Ami brand), but I haven’t found any treats he can stomach. A veggie cat treat would be just the ticket.
I’m not vegetarian, but my cat is; too weird, right?
And where’d you find fifty pounds of gluten? That’s crazy! I can only find it in those tiny little bags, smaller than five pounders.
