Cappucino Chocolate Chip Muffins

Ingredients
  • 1 c unsweetened vegan milk
  • 1 tsp vinegar
  • 1½ Tbsp instant coffee crystals
  • ½ c oil
  • 2 tsp vanilla
  • 2 c flour
  • ½ c sugar
  • 1 Tbsp baking powder
  • ½ tsp salt
  • ½ c chocolate chips
Instructions
  1. Preheat oven to 375°F.
  2. Lightly grease a jumbo muffin tin.
  3. In a medium bowl, whisk together vegan milk and vinegar.
  4. Whisk in coffee crystals until dissolved.
  5. Add oil and vanilla and set aside.
  6. In a large bowl, sift together flour, sugar, baking powder, and salt.
  7. Add wet mixture to dry and combine until just moistened.
  8. Fold in chocolate chips.
  9. Divide evenly into prepared pan and bake for 20-24 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
