Vegan Peanut Butter Silk Pie

A ridiculously rich and silky no-bake pie.
  • 25 sandwich cookies (try chocolate, vanilla, ginger, or peanut butter)
  • 5 Tbsp vegan butter, melted
  • 8 oz vegan cream cheese
  • 1 c creamy, sweetened peanut butter
  • 1¼ c powdered sugar
  • 3 c vegan whipped cream (see notes)
  1. First, prepare the crust. Using a food processor, pulse cookies into fine crumbs. You should have about 3 cups.
  2. Stir in melted butter.
  3. Press crumb mixture into a 9" pie plate.
  4. In a large bowl, beat together cream cheese, peanut butter, and sugar.
  5. Fold in whipped cream until evenly distributed.
  6. Fill crust with peanut butter filling.
  7. Place pie in freezer for at least 2 hours.
  8. Let pie thaw at room temperature for half an hour before serving.
You can make this pie with homemade whipped cream made from coconut milk or whatever store-bought vegan whipped cream is available in your area. If you make your own, you'll need about 2 15 oz. cans of coconut milk, and you don't need to add sweetener.
